Pouvez-vous nous raconter votre parcours ?<\/strong>&nbsp;<\/h2>\n<p class=\"\" style=\"white-space: pre-wrap;\">J\u2019ai un parcours atypique pour la restauration: une \u00c9cole de Commerce, un DESS \u00e0 l&#8217;IAE (Institut d\u2019Administration des Entreprises).<\/p>\n<p class=\"\" style=\"white-space: pre-wrap;\">Recrut\u00e9 par mes directeurs du DESS pour faire du consulting pour Accor, j\u2019ai travaill\u00e9 notamment pour <strong>Sofitel<\/strong> \u00e0 Marseille et Paris. Puis direction les Etats-Unis pour <strong>M\u00e9ridien<\/strong> o\u00f9 je suis rest\u00e9 7 ans. J\u2019ai alors fait tous les postes de la restauration (room-service, bar, banquets, responsable stewarding, restaurant) jusqu&#8217;\u00e0 devenir Directeur de la restauration \u00e0 29 ans. <br>Apr\u00e8s le 11 septembre, retour en France au <strong>Plaza-Ath\u00e9n\u00e9e<\/strong>, comme Adjoint au Sous-Directeur en charge de la restauration. Deux ans au Plaza-Ath\u00e9n\u00e9e o\u00f9 l\u2019aventure avec Alain Ducasse a commenc\u00e9.<\/p>\n<p class=\"\" style=\"white-space: pre-wrap;\">Ensuite, engag\u00e9 comme bras droit d\u2019Alain Ducasse pendant 2 ans, puis Directeur des Op\u00e9rations, j\u2019ai mont\u00e9 le p\u00f4le restauration et travaill\u00e9 avec une \u00e9quipe incroyable pendant 13 ans aux c\u00f4t\u00e9s d\u2019Alain Ducasse et Laurent Plantier, son associ\u00e9.<\/p>\n<p class=\"\" style=\"white-space: pre-wrap;\">Apr\u00e8s 13 ans, d\u00e9part fin 2016 sur Londres comme COO and Director of Assets du groupe <a href=\"https:\/\/www.dogusgrubu.com.tr\/en\/dogus-hospitality-retail\" target=\"_blank\" rel=\"noopener\"><strong>Dogus<\/strong><\/a> pour la restauration, puis CEO de <a href=\"https:\/\/dream-international.com\" target=\"_blank\" rel=\"noopener\"><strong>D.ream International<\/strong><\/a>, un portefeuille unique de marques internationales lifestyle haut de gamme (Zuma, Roka, Coya, Nusret, Amazonico entre autres). Le choc de culture constant, les march\u00e9s et les clients avec des attentes diff\u00e9rentes et les employ\u00e9s pas forc\u00e9ment rompus \u00e0 la m\u00eame exigence que celle demand\u00e9e par Alain Ducasse.<\/p>\n<p class=\"\" style=\"white-space: pre-wrap;\">Depuis maintenant plus de 5 ans, j&#8217;ai eu la chance d\u2019ouvrir des restaurants extraordinaires : <em>Coya Monaco<\/em>, <em>Coya Paris<\/em>, <em>Coya Mykonos<\/em>, <em>Coya Riyadh<\/em>, <em>Amazonico Londres<\/em>, <em>Amazonico Dubai<\/em>, <em>Nusret Miami<\/em>, <em>Bar des Pres Londres<\/em> et d\u2019autres \u00e9tablissements qui sont des marques et unit\u00e9s incroyables par leur taille, et l&#8217;exp\u00e9rience que nous donnons. Cette organisation-apprise au sein du Groupe Alain Ducasse a un co\u00fbt mais porte ses fruits.<\/p>\n<h2 style=\"white-space: pre-wrap;\"><strong>Quelles sont les grandes \u00e9tapes dans l\u2019ouverture d\u2019un restaurant ?<\/strong>&nbsp;&nbsp;<\/h2>\n<p class=\"\" style=\"white-space: pre-wrap;\">Il y a plusieurs \u00e9tapes qui sont vitales. La premi\u00e8re \u00e9tant <strong>l\u2019identification d\u2019un march\u00e9<\/strong>, d\u2019un site, de sa compatibilit\u00e9 avec nos standards et notre fonctionnement, mais aussi le contr\u00f4le du risque encouru. Cette \u00e9tape d\u2019identification de site, de compatibilit\u00e9, et de n\u00e9gociation du bail garantit d\u00e9j\u00e0 une limitation du risque si celle-ci est bien faite. Il faut beaucoup d&#8217;exp\u00e9rience et de connaissance pour le faire. Contrairement bien souvent aux apparences. Les pi\u00e8ges sont multiples et les sp\u00e9cificit\u00e9s de chaque marche encore plus. <strong>Il faut connaitre les march\u00e9s et les KPI<\/strong> (Key Performance Indicators) par c\u0153ur, et il faut savoir si un site va \u00eatre rentable et tout prendre en compte : passage, attractivit\u00e9, voisinage, proximit\u00e9 avec les h\u00f4tels de luxe, le retail de luxe, la perception d\u2019une rue peut \u00eatre mauvaise d\u2019une rue \u00e0 l&#8217;autre !<\/p>\n<\/div>\n<figure class=\"block-animation-reveal\">\n<blockquote data-animation-role=\"quote\" data-animation-override=\"\">\n<p>\u201cThe battle is won before it is fought !\u201d<\/p>\n<\/blockquote>\n<\/figure>\n<div class=\"sqs-html-content\">\n<p class=\"\" style=\"white-space: pre-wrap;\">Cette \u00e9tape est cruciale. C\u2019est tellement difficile d\u2019ouvrir \u00e0 l\u2019\u00e9tranger. Beaucoup s\u2019y essaient, peu y parviennent avec succ\u00e8s.<\/p>\n<p class=\"\" style=\"white-space: pre-wrap;\">Ensuite se pose \u00e0 nous tout <strong>le suivi de projet<\/strong>, de construction, de timing, de budget, qui est aussi importante pour que le r\u00e9sultat soit celui attendu dans un timing efficace. Le loyer court apr\u00e8s quelques mois ou le bailleur a consenti le temps de construction sans loyer. On n\u2019a pas droit \u00e0 l&#8217;erreur pour le General manager, le Chef Ex\u00e9cutif et leurs adjoints.<\/p>\n<p class=\"\" style=\"white-space: pre-wrap;\">Puis la phase d&#8217;adr\u00e9naline pure qui est la fin des travaux, <strong>le d\u00e9but du \u201ctraining\u201d et l\u2019ouverture<\/strong>. On a qu\u2019une seule chance de faire une ouverture r\u00e9ussie pour lancer son restaurant. C\u2019est terrible, mais c\u2019est ainsi. Ce m\u00e9tier a cela de cruel que les clients et le bouche \u00e0 oreille ne pardonnent jamais. On donne donc tout pendant 8-10 semaines non stop avec toutes les \u00e9quipes support.<\/p>\n<h2 style=\"white-space: pre-wrap;\"><strong>Quel est le plus important pour s\u2019assurer de la r\u00e9ussite de son restaurant d\u00e8s l\u2019ouverture ?<\/strong><\/h2>\n<p class=\"\" style=\"white-space: pre-wrap;\">Pour moi, c\u2019est avant tout <strong>une ex\u00e9cution parfaite d\u00e8s le d\u00e9but<\/strong>. On engage tout le monde 4 semaines avant et on fait un nombre de &#8220;trainings&#8221; incalculable. Staff on staff, puis soft opening, presse, gros clients \u00e0 qui on donne la primeur de l&#8217;\u00e9tablissement et que l\u2019on invite. Tout cela contribue \u00e0 construire le succ\u00e8s d\u00e8s l\u2019ouverture.<\/p>\n<p class=\"\" style=\"white-space: pre-wrap;\">Les r\u00e9seaux sociaux et la presse jouent un r\u00f4le clef aussi. Mais la r\u00e9alit\u00e9 du terrain et de l&#8217;ex\u00e9cution fait revenir les clients et cr\u00e9e une p\u00e9rennit\u00e9. Nous devons avant tout d\u00e9livrer. Militairement d\u2019abord sur la cuisine et le service, puis avec tous les param\u00e8tres qui nous diff\u00e9rencient : design, musique, \u201clighting\u201d, ambiance, profils de clients.<\/p>\n<h2 style=\"white-space: pre-wrap;\"><strong>Comment assurer la p\u00e9rennit\u00e9 de son restaurant et sa r\u00e9ussite sur le long terme ?<\/strong>&nbsp;<\/h2>\n<p class=\"\" style=\"white-space: pre-wrap;\">La p\u00e9rennit\u00e9, c\u2019est la constance. Aujourd&#8217;hui, les clients sont en qu\u00eate d\u2019une exp\u00e9rience de A \u00e0 Z et c\u2019est ce que nous nous attelons \u00e0 leur donner au quotidien, en nous remettant en question tous les jours. Ce qui fait la r\u00e9ussite sur le long terme c\u2019est que la qualit\u00e9 du service, de la cuisine et de l&#8217;exp\u00e9rience globale (s\u00e9curit\u00e9, h\u00f4tesse, bartender,\u2026) sont toujours de qualit\u00e9.<\/p>\n<p class=\"\" style=\"white-space: pre-wrap;\">Chacun a un r\u00f4le tr\u00e8s important \u00e0 jouer.
