Peux-tu te pr\u00e9senter en quelques mots et nous raconter ton parcours ?&nbsp;<\/h3>\n<p class=\"\" style=\"white-space:pre-wrap;\">J\u2019ai suivi une formation plut\u00f4t acad\u00e9mique, avec une classe pr\u00e9paratoire suivi par une \u00e9cole de commerce, l\u2019Essec. J\u2019ai commenc\u00e9 ma carri\u00e8re comme consultant dans un cabinet de conseil en strat\u00e9gie, Oliver Wyman, dans le d\u00e9partement services financiers. Mes clients \u00e9taient principalement des banques et des institutions europ\u00e9ennes.&nbsp;<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">Avant de me lancer dans l\u2019aventure de la restauration avec la premi\u00e8re ouverture de <a href=\"http:\/\/www.bieneleve.fr\" target=\"_blank\" rel=\"noopener\"><strong>Bien \u00c9lev\u00e9<\/strong><\/a> en 2016, puis de continuer avec <strong>Bien Ficel\u00e9<\/strong> en 2018 et <strong>Ardent Paris<\/strong> en 2022 !<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">Mes restaurants puisent leur identit\u00e9 culinaire dans la bistronomie, mais en mettant particuli\u00e8rement en avant le produit, principalement la viande de qualit\u00e9 d\u2019\u00e9levage fran\u00e7ais, et suivent tous le m\u00eame engagement \u00e9co responsable : sourcing direct, saisonnalit\u00e9, locavorisme, anti-gaspi\u2026&nbsp;<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">Le produit est vraiment au centre de l&#8217;exp\u00e9rience : le choix de l&#8217;\u00e9leveur et de ses pratiques est primordial, au m\u00eame niveau que les qualit\u00e9s gustatives de la viande.<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">Le travail du chef est de venir sublimer ce produit, par une cuisson, un geste, une sauce&#8230; Le nerf de la guerre : recruter, onboarder, faire grandir, fid\u00e9liser.
